CMP manufactures a Gondola Style Cooker to process large production rates of various shellfish products including lobster and crab. The unit features a multi-pass arrangement of gondolas that enclose product in cooking pans and transport through the cooking medium. Precise control of cooking temperature and transition time are provided. The system can be configured for manual or automatic loading and discharge of cooking pans. Production rates in excess of 10,000 pounds per hour can be accommodated.
